long before european settlers, 1st nations from eastern Canada and north eastern parts of the US
had discovered how to collect maple sap and boil it down into syrup/.
the tradition of sugar houses was introduced in Quebec, Ontario, New Brunswick and Nova Scotia through out the 17th centruy.
These were to produce maple syrup for trade and sale as well as for personal use through the lond cold winter months
The traditional brunch with lots of maple syrup treats is this Sunday from 10 am to noon
